Ingredients – Makes 12

3 free-range organic eggs

240g of bananas

200 ml almond milk

80g melted coconut oil

90g coconut flour

45g buckwheat flour

2 tsp cinnamon

1 tsp nutmeg

1 tsp ground ginger

1 tsp bicarbonate of soda

45g coconut sugar

50g walnuts, chopped

1 tbsp chia seeds

Method

Preheat the oven to 180C /160°C fan/350°F

Line a 12-hole muffin tin with paper cases

  1. In a large bowl, mash the banana and then add the almond milk and cooled coconut oil. Whisk the eggs and then add to the bowl, combining all ingredients with a spatula.
  2. In a separate bowl, add the coconut flour, buckwheat flour, coconut sugar then cinnamon, nutmeg, ground ginger and bicarbonate of soda. Mix to combine.
  3. Add the dry ingredients into the large bowl of wet ingredients. Mix well, with a spatula. Then stir through the chia seeds and half of the walnuts.
  4. Pour equal amounts of the mixture into the muffin cases and then sprinkle the remaining chopped walnuts over each muffin and place in the oven.
  5. Cook for 20-25 minutes.
  6. Remove from the oven and test with a sharp knife / skewer. If ready, the knife should come out clean.
  7. Allow to cool in the muffin tin for 10 minutes. Then transfer to a wire cooling rack.
